An impressive component of the Valdobbiadene tradition and part of our family since the early 1900s, Col Fondo owes its name to the yeast activity. Once the yeast has consumed all the sugar in the grape must, its cells form a sediment (the fondo) on the bottom of the bottle, which over time contributes to an intriguing evolution of the wine.

A dazzling mix of crushed green apples. South Patch lime, tropical melon and wet river stones makes the 2021 Brut Nature Prosecco Superiore sui Leiviti Col Fondo a total pleasure on the nose. This is silky-smooth yet delicate in feel, with a bead of silken bubbles that seem to hvoer across the palate. Ripe pear and sweet herbal tones linger as the 2020 finishes a bit shorter than anticipated, yet with a salty flourish of minerality that urges me back to the glass for more.
